Pizza-makers from Naples, or so-called "pizzaiuoli", spin the dough in the air before baking it in a wood-burning brick oven. With their trademark classic pizzas being the Marinara (tomato, garlic, oregano and olive oil) and the most famous, Margherita (tomato, mozzarella, oil and basil), which has the same red, white and green colours as the Italian flag and was born in honour of Queen Margherita of Savoy.
As pizza has become a favourite dish around the world, foreign innovations in toppings have often left Italians perplexed. Some of those eating at a local restaurant before the announcement hoped the UNESCO recognition may lead to others not putting chocolate spread or pineapple on the top of their pizza.
